Herb Crackers

This recipe is simple and yet these crackers are so good!

Ingredients:

  • cups almond flour or almond meal
  • ½ teaspoon sea salt
  • 2 tablespoons herbs (fresh or ground – I use Italian seasoning blend)
  • 1 ½ T olive oil
  • 1 large egg

Instructions

  1. In a mixing bowl, combine almond flour, salt and herbs.
  2. In a separate bowl, whisk together olive oil and egg.
  3. Stir wet ingredients into almond flour mixture until thoroughly combined.
  4. Roll dough into a ball and press between 2 sheets of parchment paper.
  5. Press or roll out dough to about ⅛ inch thickness.
  6. Remove top piece of parchment paper and transfer the bottom sheet and dough onto a baking sheet.
  7. Cut dough into squares with a knife or pizza cutter.
  8. Bake at 350° for 12-15 minutes, until lightly golden.
  9. Let crackers cool on baking sheet before serving.
