Parchment Baked Cod and Aspargus

  • 4 15×15-inch squares parchment paper
  • 4 5-to 6-ounce cod fillets
  • 1 pound slender asparagus spears, trimmed
  • 2 lemons, sliced
  • 2-4 T olive oil
  • Lemon pepper seasoning, to taste (or just salt and pepper)


  1. Preheat oven to 400°F.
  2. Place parchment squares on work surface.
  3. Generously drizzle olive oil on parchment square, then place 1 fillet on each.
  4. Sprinkle fish with seasoning, to taste.
  5. Arrange asparagus around each fish fillet.
  6. Fold parchment over fish and asparagus, folding and crimping edges tightly to seal and enclose filling completely.
  7. Place on rimmed baking sheets, spacing apart.
  8. Bake fish packets 17-20 minutes.
  9. Slide packets onto plates and serve.
