~1 cup grated zucchini
~1 cup grated sweet potato
~1 egg *
~1 T coconut flour *
~1/2 tsp garlic powder
~1/4 tsp cumin
~salt and pepper to taste
1. Mix zucchini, sweet potato, egg and dry ingredients together in a bowl.
2. Heat a pan over medium high heat with ghee or coconut oil.
3. Add the zucchini/sweet potato mixture to form pancakes. Press mixture down with a fork.
4. Cook until pancakes are golden and crisp, then carefully flip them and cook on the other side.
