Peppermint Patties

These Peppermint Patties are a healthier version of the original chocolate peppermint treat!  Not only are they easy to make, but they contain only 5 simple ingredients, healthy fat from coconut, and are gluten and dairy free,

Depending on dietary preference, there are many options for adding sweetness to this recipe.  You can use either honey or maple syrup for a Paleo version, stevia or erythritol for a sugar-free or Keto version, or omit sweetener all together for Whole 30.

In addition, you can also vary the ratio of coconut butter to coconut oil to alter the consistency or the peppermint center.  More coconut butter makes the center more dense with a texture that is more dry.  Increasing coconut will make the center a bit more creamy, soft and smooth.

Whether you are looking an afternoon snack, an after dinner treat, or just want a little chocolate, these peppermint patties are the perfect healthy, and tasty treat!  Consequently, you’ll most likely be making another batch not long after you make the first!

Ingredients:

For the peppermint filling –

  • 1/2 cup coconut butter
  • 2 T coconut oil, melted
  • 1 tsp peppermint extract
  • stevia or erythritol to taste (honey or maple syrup for Paleo / omit for Whole 30)

For the chocolate layer –

  • 2 T coconut oil, melted
  • 4 oz dark chocolate (bar or chips)

Directions:

  1. Line a mini-muffin tray with silicone liners.
  2. In a small bowl, mix all peppermint filling ingredients together.
  3. Spoon a small amount of peppermint filling into silicone lined mini-cupcake trays about 1/4 inch thick.  Freeze until solid.
  4. Prepare the chocolate by melting the coconut oil and dark chocolate together.  Allow the mixture to cool, but remain liquid.
  5. Remove the peppermint filling from the silicone liners.
  6. Place a spoonful of chocolate in the bottom of each liner, just enough to cover the bottom.
  7. Return the peppermint filling to the cup, then spoon additional chocolate mixture to completely cover the peppermint.
  8. Freeze until sold.  Let thaw for about 5 minutes before enjoying.
  9. Store in freezer or refrigerator.
