~1 cup almond butter
~1/3 cup honey
~1 Tbsp. vanilla extract
~1/2 tsp. baking soda
~1/4 tsp. baking powder
~1/2 tsp. salt
~1/2 cup chocolate chips (‘enjoy life’ brand is gluten-free and dairy-free)
~2/3 cup unsweetened coconut
1. Preheat oven to 350 degrees.
2. Line baking sheets with parchment paper.
3. Stir together almond butter, honey, egg, vanilla, baking soda, powder and salt. Mix well. Make sure honey is fully incorporated. Add chips and coconut.
4. Spoon onto cookie sheets. Bake 8-13 minutes or until lightly browned. (makes 24 cookies)
