Ingredients:
~1½ pound chicken tenders (or chicken breast cut into thin strips)
For Chicken Seasoning:
~3 tablespoons tamari
~2 teaspoons coriander
~1 teaspoon cumin
~1 tablespoon sesame oil
For Dipping Sauce:
~½ cup almond butter
~¼ cup coconut milk
~¼ cup water
~1 garlic clove
~2 teaspoons ginger, minced
~3 teaspoon tamari
~3 teaspoons sesame oil
Instructions:
~Turn oven broiler or a grill to high heat.
~Season the chicken with tamari, sesame oil, coriander and cumin.
~Broil or grill for 10 minutes, until chicken is cooked through.
~Mix all the ingredients for the dipping sauce together until smooth.
~Serve the chicken tenders with the almond coconut dipping sauce.
~Garnish with chopped scallions if desired.
