Ingredients:
~4 large bell peppers
~16 oz ground turkey, browned and seasoned
- ½ tsp. salt
- ½ tsp. onion powder
- ½ tsp. garlic powder
- 1 tsp. cumin
- 1 tsp. paprika
- 1 tsp. chili powder
~2 cups quinoa, cooked
~15 oz. can black beans
~15 oz can diced tomatoes*
~2 green onions
- 2 T nutritional yeast (optional)
- 1 tsp. cumin
- 1 tsp. paprika
- 1 tsp. chili powder
Directions:
- Pre heat oven to 375 degrees.
- Cook quinoa according to package directions and set aside.
- Brown ground turkey and season with salt, onion, garlic, cumin, paprika and chili powder.
- Prepare the peppers. Cut in half, remove stems, seeds and ribs.
- Rinse and drain black beans, drain tomatoes and slice green onions.
- In a large mixing bowl, add cooked quinoa, black beans, tomatoes, green onions, nutritional yeast and seasonings.
- Stir to combine. Add more seasonings, if desired.
- Place peppers in a 9×13 baking dish and fill them with the turkey/quinoa filling.
- Cover the dish with foil and bake for 35-40 minutes, or until peppers are cooked to your preference.
- Serve with any desired toppings. (guacamole, salsa, hot sauce, etc)
*You can use fresh diced tomatoes or salsa in place of canned diced tomatoes.
Notes:
~Nutritional yeast is used to add a cheese flavor for those avoiding dairy products.
~You may choose to use a ready-made taco seasoning rather than the individual seasonings.
