Paleo Chocolate Zucchini Cake

It’s zucchini season! The perfect time to make a chocolate zucchini cake!

This one is gluten free, dairy free, no refined sugar, and paleo friendly.

The best part…..it’s really good!

Ingredients

~1 cup almond butter

~1/3 cup maple syrup or raw honey

~¼ cup cocoa powder

~¼ tsp sea salt

~1 tsp baking soda

~1 large egg

~1 tsp vanilla extract

~1 ½ cups of shredded zucchini

~1 cup chocolate chips (enjoy life brand – dairy free)

Directions

  1. Preheat oven to 350 degrees.
  2. Grease a 9×9-inch pan with coconut oil OR line the pan with parchment paper to allow you to remove the cake from the pan in one piece.
  3. In a large bowl combine almond butter, maple syrup, cocoa powder, salt, baking soda, egg and vanilla. Blend until smooth.
  4. Stir in zucchini and chocolate chips.
  5. Pour into prepared pan and bake for 35-45 minutes- until just set or a toothpick comes out clean. Do not overbake.
  6. Allow cake to cool before serving.
