It’s zucchini season! The perfect time to make a chocolate zucchini cake!
This one is gluten free, dairy free, no refined sugar, and paleo friendly.
The best part…..it’s really good!
Ingredients
~1 cup almond butter
~1/3 cup maple syrup or raw honey
~¼ cup cocoa powder
~¼ tsp sea salt
~1 tsp baking soda
~1 large egg
~1 tsp vanilla extract
~1 ½ cups of shredded zucchini
~1 cup chocolate chips (enjoy life brand – dairy free)
Directions
- Preheat oven to 350 degrees.
- Grease a 9×9-inch pan with coconut oil OR line the pan with parchment paper to allow you to remove the cake from the pan in one piece.
- In a large bowl combine almond butter, maple syrup, cocoa powder, salt, baking soda, egg and vanilla. Blend until smooth.
- Stir in zucchini and chocolate chips.
- Pour into prepared pan and bake for 35-45 minutes- until just set or a toothpick comes out clean. Do not overbake.
- Allow cake to cool before serving.
