Ingredients:
~2 Eggs
~2 Egg Whites (optional)
~1 – 1 ½ T Unflavored Protein Powder (I use a plant-based protein powder)
~1 T coconut or olive oil
~Handful(or two) of Spinach, chopped
~Sea Salt & Pepper to taste
Directions:
1. In a small bowl, whisk together eggs, egg whites, protein powder and seasonings. Set aside.
2. Heat oil in a skillet over medium heat. Add spinach and cook until wilted.
3. Pour egg mixture over spinach and scramble together until eggs are cooked through.
4. Enjoy a healthy egg scramble with an extra boost of protein!
