Everyone loves deviled eggs. Here’s a fun twist on the classic deviled egg recipe! And it’s a great way to get more veggies!
Ingredients:
- 6 hard boiled eggs
- 6 T mayo (make your own)
- 1 cup chopped sauteed spinach
- 1/2 cup chopped marinated artichoke hearts (store bought or prepared at home)
- Garlic and onion powder to taste
- Sea salt and cracked pepper to taste
Directions:
- Hard boil the eggs. Place eggs in a pot, just covered with water. Bring the water to a boil. Once boiling, turn off heat, cover and let sit for 20 minutes.
- While hard boiling eggs, saute the spinach, cool and squeeze liquid from it before chopping.
- Chop sauteed spinach and artichokes and set aside.
- When ready, run the hard-boiled eggs under cold water. Then peel.
- Slice the eggs in half and remove the yolks.
- Mix the yolks with the mayo, spinach, artichokes and seasonings.
- Fill egg whites with spinach artichoke mixture.
- Garnish and enjoy!
