Spinach Artichoke Deviled Eggs

Everyone loves deviled eggs.  Here’s a fun twist on the classic deviled egg recipe!  And it’s a great way to get more veggies!

Ingredients:

  • 6 hard boiled eggs
  • 6 T mayo (make your own)
  • 1 cup chopped sauteed spinach
  • 1/2 cup chopped marinated artichoke hearts (store bought or prepared at home)
  • Garlic and onion powder to taste
  • Sea salt and cracked pepper to taste

Directions:

  1. Hard boil the eggs.  Place eggs in a pot, just covered with water.  Bring the water to a boil.  Once boiling, turn off heat, cover and let sit for 20 minutes.
  2. While hard boiling eggs, saute the spinach, cool and squeeze liquid from it before chopping.
  3. Chop sauteed spinach and artichokes and set aside.
  4. When ready, run the hard-boiled eggs under cold water.  Then peel.
  5. Slice the eggs in half and remove the yolks.
  6. Mix the yolks with the mayo, spinach, artichokes and seasonings.
  7. Fill egg whites with spinach artichoke mixture.
  8. Garnish and enjoy!
