Can a cupcake that is gluten free, dairy free, paleo-friendly, whole 30 compliant, has no added sugar, and only 3 ingredients actually taste really good?
Answer: YES!!!
Try this recipe for yourself and find out. It is sweetened with bananas, so there is no added sugar. It is rich in flavor with a dense, fudge like consistency.
– Cupcakes –
Ingredients:
- 2 ripe bananas
- 1/2 cup almond butter (or any nut butter)
- 3-4 T cocoa powder
Directions:
- Preheat oven to 350 degrees.
- Combine all ingredients using a food processor, or a hand mixer. Blend until smooth.
- Spoon batter into six (6) cupcake liners.
- Bake for 17-20 minutes , until a toothpick inserted, comes out clean.
Bake less for a more dense fudge-like cupcake. Bake longer for a cupcake that is more muffin-like.
Next……..a healthy chocolate frosting.
Note – This frosting recipe does contain honey or maple syrup as a sweetener. So you may want to skip the frosting if you are staying away from added sugar as in the Whole 30 outline.
– Chocolate Fudge Frosting –
Ingredients:
- 1 large ripe avocado, peeled and seed removed
- 3 T cocoa powder
- 1-2 T raw honey (or maple syrup)
Directions:
- Combine all ingredients using a food processor, or a hand mixer. Blend until smooth.
- Chill frosting until ready to use.
- Use as a frosting for cakes or cupcakes.
